Like any other staple, though, the quality rests on ingredients and imagination. For many aficionados, Lolis Mexican Cravings (soon to have a total of three locations in Tampa) is favored for its authentic flavors. In St. Pete, you can’t go wrong at any of the Red Mesa restaurants, whether your taste leans toward the orange braised duck confit quesadilla at Red Mesa Cantina or a belly-filler like Red Mesa Mercado’s breakfast version. The top-rated beach restaurant Marina Cantina serves the ultimate Florida variation, the grouper quesadilla. And for a true but no less tasty departure from the norm, try the spinach and mushroom quesadilla at the veggie/vegan-centric Cider Press Cafe, served with salsa, cashew crema and pickled jalapeños.
